





Other bush spices of interest inlcude : Aniseed Myrtle (Anetholea anisata), Wild lime (Citrus glauca), Bush Tomato (Solanum centrale) and Rose Myrtle (Archirhodomyrtus beckleri)
Aniseed Myrtle provides a unique aniseed flavour and aroma to sweet and savoury dishes. It is commonly used in desserts, preserves, sweet sauces, salad dressings and can be used in tea blends.

Wild Lime has a strong citrus taste and is used to flavour sweet and savoury dishes.
Bush tomato has more earthy intense flavours than commercial tomatoes. Can be used in breads, foccacias, antipasto and sauces.

Rose Myrtle has aromatic oils which are contained within dark glossy leaves. Once crushed these oils are released to provide fragrance and flavouring to cakes, custards and dressings. The flowers which are yellow to red fruits are also edible.
