There are a few Acacia (wattle) species that are used within the native foods industry. The most commonly used species include Acacia victoriae (Elegant Wattle), A. pycantha (Golden Wattle), A. sophorae (Coastal Wattle) and A. retinodes (Silver Wattle).
The seeds are glossy dark brown and produce a nutty flavour when roasted. They are a great addition to breads, ice-cream, cakes, biscuits and sauces.
